METHOD

  1. Preheat oven to 325°F. Thinly slice one-quarter asparagus into coins and place in a medium bowl. Then set them aside.
  2. Heat butter and 2 tbsp olive oil in a pan.
  3. Now, season fish with salt and black pepper on both sides and place on a rimmed baking sheet. Scatter remaining asparagus around fish and season with salt and black pepper. Pour butter mixture over fish and vegetables. Give vegetables a toss to evenly coat. Roast for 15–25 minutes, depending on the thickness of your fillets.
  4. Toss olives, lemon juice, and remaining oil with reserved asparagus. Season with salt and black pepper.
  5. Transfer fish to a platter and top with asparagus. Spoon some olive mixture over. Serve it with potatoes, few lemon wedges, and some remaining olive mixture alongside.

2. Grilled halibut with vinegar and salt potatoes

  1. Heat grill to medium-high. Divide the potatoes and toss with the vinegar, and add ½ tbsp each salt and pepper. Now, fold the foil over the potatoes and seal its edges to form 2 packets. Place it on the grill and then cook for a while. Turn it once, until the potatoes are tender for about 20 to 25 minutes.
  2. Meanwhile, rub the halibut and onion with the remaining tbsp of oil and season with ¼ tbsp of salt and pepper. After the potatoes cook for about 15 minutes, grill them in some oil. Add the halibut and onion and cook until the halibut is opaque throughout, 3 to 5 minutes per side, and the onion is tender, 4 to 5 minutes per side.
  3. Take a small bowl and then toss the arugula with some lemon juice. Now, top the halibut with the arugula and serve it with the potatoes, onion, and some lemon wedges.

  1. In a small mixing bowl, combine the butter, honey, lemon juice, soy sauce, pepper, and garlic.

  1. In a large saute pan, heat the oil over moderate heat. Add the onions and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Now, add some curry paste and cook it.   1. Preheat the oven at 400 degrees F.
  2. Line a baking sheet with foil.
