  8. Now, filter the tomato mixture and discard the paste.
  9. Add water.
  10. Get the soup to a boil and add sugar, pepper, and salt.
  11. Mix it all well.
  12. Turn off the flame and now, add 2 tbsp cream, mix well.
  13. Finally serve this creamy tomato soup garnished with mint leaf and some cream.

  • ½ cup Fried noodles
  • Spring onion, chopped finely for garnishing.

PREPARATION:

  • First, we need to make fried noodles which will go on top as a garnishing at the end.
  • This needs to be pre-planned, as boiled noodles will require some time to dry-out.
  • Then deep-fried in the oil. You can find the recipe for the fried noodles link below.
  • So while your noodles are drying. Till then make the soup. While soup is simmering, then fry the noodles.
  • Now make cornstarch slurry. Take cornstarch in a small bowl.
  • Make a smooth paste by adding ¼ cup of water. Then keep it aside till needed.
  • Also, prepare all the veggies and the rest of the ingredients.

METHOD

  1. Heat the oil in a saucepan on a medium flame.
  2. Once hot add chopped ginger, garlic, green chili, celery, and green onions. Saute for about 2 minutes.
  3. Add all chopped vegetables. Mix and cook for 2-3 minutes.
  4. Now add salt and pepper.
  5. Add vegetable stock.
  6. Once it starts boiling, let it simmer for 2 minutes.
  7. Then add cornstarch mixture. Before adding it into soup, stir it.
  8. Now add soy sauce and vinegar. Mix it well and cook for a while.
  9. Then turn off the stove.
  10. Remove the soup in an individual serving bowl. Add fried noodles.

  • Tofu
  • Red chili powder

For

  1. Mix all the ingredients except the tofu.
  2. Now, coat it with the marinade and fry it in a heated oil pan till it turns golden brown.

For makhani curry

  1. Heat the oil in a pan. Add cumin seeds, and when they sputter add cloves and cinnamon powder. Saute for a minute or two. 
  2. Add onions and saute until the onions start to brown, for 6-8 minutes. Now, add ginger paste, minced garlic, and raw cashews and saute for a while.
  3. Then, add tomatoes and tomato paste, coriander powder, turmeric powder, and red chili powder.
  4. Saute the mixture well. Also add some vegetable stock and cook it for some time.
  5. Once you cook the mixture well and tomatoes are soft, turn off the heat and let the mixture cool. Now, pour the mixture into a blender and add a cup of vegetable stock. Blend to make a smooth paste. 
  6. Now, pour the blended paste back into the saucepan and turn on the heat. Add some vegetable stock if the mixture is thick, and bring to a simmer. Then, add the tofu cubes and stir them. Now, add salt to taste. 
  7. Add the butter and stir it to melt the butter into the sauce.
  8. Also, add some lemon juice, mix well, garnish with coriander leaves, and serve hot with some boiled rice or naan.
